Inline Analysis of Particle Size and Shape of Cocoa and Chocolate Products

Chocolate is a dispersion of solid particles like cocoa and sugar in a cocoa butter matrix. The size of the particles determines the mouth-feel of chocolate and the melting behavior on the tongue.

Thanks to the ChocoScope, it is now possible to determine particle size and shape of cocoa particles during the production process by inline measurements. Leading to significant reduction of subsequently added cocoa, spended energy and raw materials and therefore minimizing production costs. The aim is to avoid the overgrinding and to optimize and ensure the quality of the product.

The ChocoScope enables the analysis of particles in the range of 1.5 to 350µm with a field of view of 0.8 mm for various cocoa and chocolate products. The SOPAT system is made of 1.4404 steel (316L) and is specially optimized for the chocolate processing industry. The ChocoScope is FDA-compliant and meets all requirements like CE, IP65 & SIP/CIP.

Thanks to its modular design, the ChocoScope can be integrated at various points in the process. With the help of process control systems such as Modbus TCP/IP, OPC UA or others, data transmission and feedback control is guaranteed.
