Dispersion stability is a crucial characteristic of numerous beverages and foodstuffs, such as cloudy juices, dairy products, sauces, dressings, and other convenience products. To optimize those in product development, a dispersion stability analysis is inevitable. This analysis is carried out fast, easily, and highly precise with a MultiScan MS 20 from DataPhysics Instruments.
The MS 20 offers a non-destructive, time- and space-resolved optical stability and aging analysis of emulsions and suspensions, but also foams – in the original concentration as well as under the real storage conditions. With up to six independent ScanTowers it is possible to run in parallel measurements on different timescales (ranging from minutes to months) and at various temperatures (4 °C up to 80 °C).
With the intuitive MSC software automatic measuring procedures are defined and the stability, occurring destabilization mechanisms as well as sample parameters like the particle size are subsequently comprehensively analyzed.
