Hiyamugi (jap. 冷(や)麦) ist eine japanische Nudelsorte aus Weizen, die in der Dicke zwischen Sōmen (dünn) und Udon (dick) liegt. Sie werden entweder kalt (auch als Salat) oder in einer heißen Brühe gegessen.
